Profit is not guaranteed. Another bot can take the gap first, and a cycle that no longer pays reverts: you lose only the gas. Quotes are exact for the block they were read at, not for the block your transaction lands in.

One transaction
The engine flash-swaps the cheap pool, sells in the rich pool, repays the first pool and splits the difference: 90% to you, 10% to the protocol. If the cycle does not end with a profit it reverts.
